Cannelloni ricotta e spinaci

Ecco il nostro pranzo di oggi
Cannelloni spinaci e ricotta
Ingredienti
per 6 persone, o 4 affamate ;-)
per i cannelloni
250 gr farina
1 uovo
acqua quanto basta
per il ripieno
500gr spinai freschi
250gr ricotta
sale, pepe e noce moscata
per il sugo
400gr pomodori a pezzetti
400gr passata di pomodoro
1 cipolla piccola
1 carota piccola
4 cucchiai di olio di oliva
sale
basilico
Parmigiano
Preparazione
Prepara la pasta: lavora la farina con l'uovo e l'acqua fino ad ottenere un composto morbido. Metti in frigo per mezz'ora.
Prepara il ripieno: cuoci gli spinaci in poca acqua salata, scolali e tagliali a pizzoli pezzi. Mescola la ricotta con gli spinaci, e aggiungi sale, pepe e noce moscata secondo gusto ;-)
Prepara il sugo: taglia la carota e la cipolla a piccoli pezzi. Fai soffriggere in olio caldo. Aggiungi i pomodori a pezzetti, la passata, sale e basilico e fai cuocere a fuoco basso per 20 minuti.
Stendi l'impasto per i cannelloni in una sfoglia sottile, e taglia dei quadrati di 10xa0cm. Metti un po' di ripieno al centro di ogni quadrato, e arrotola. Metti i cannelloni in una pirofila dove avrai messo un po' di sugo. Copri i cannelloni con il sugo, aggiungi parmigiano a piacere. Cuocere in forno preriscaldato a 180gradi per 45 minuti. Fai raffreddare leggermente e buon appetito ;-)

for the cannelloni
250 gr flour
1 egg

for the spinach and ricotta filling
500gr fresh spinach
250gr ricotta cheese
salt, pepper and muscat nut
for the sauce
400gr chopped tomatoes
400gr tomato sauce
1 small onion
1 small carrot
4 spoons olive oil
salt
basil
Parmigiano cheese
Preparation
Make the dough: mix flour, egg and water until a smooth dough. Place in the fridge for 30 minutes.
Make the filling: boil the spinach in a little bit of salty water, drain and chop in small peaces. Mix the spinach with the ricotta cheese, and add salt, pepper and muscat nut until you like the taste ;-)
Make the sauce: chop the onion and the carrot. Heat the oil in a pan, add the onion and carrot and let them soften. Add the tomatoes, the tomato sauce, basil and salt and let cook for about 20 minutes.
Roll the dough, and cut 10x10cm squares. Put a lit bit of filling on each square and roll to a cylinder.
Put all the cannelloni in a casserole greased with a bit sauce, and cover with the other sauce. Cover with (how much you want) parmigiano cheese and put in a warm over (180degree) for about 45 minutes. Let the cannelloni cool a little bit, and enjoy ;-)
